I was so full but Puffin talked me into one more thing! The word apom means pancake in Malay, Chooi is the name of the vendor himself. His brother Guan works another stall only 30 feet away but apparently they're not on talking terms. Gotta love the internet - don't know if any of that is true but it makes for a good story - check out the source for this post here.
We bought out the last five which were already made so I didn't get to see him cook any. They're made with no flour: just eggs, coconut milk, rice milk, shredded coconut and sugar. The bananas hang from the stall and are black and bruised as you would expect for good flavor.
In a clear case of Ang Mo-ism, I wanted it to be a little bit sweeter with a richer banana flavor. My taste buds demand it, probably they're burned out from so much time in NY and Paris, where things tend to be powerfully sweet and tasty. Nevertheless, I enjoyed the experience.
